    Abstract Plant proteins are expected to become a major protein source to replace currently used animal-derived proteins in the coming years. However, there are always challenges when using these proteins due to their low water solubility induced by the high molecular weight storage proteins. One approach to address this challenge is to modify proteins through Maillard glycation, which involves the reaction between proteins and carbohydrates. In this review, we discuss various chemical methods currently available for determining the indicators of the Maillard reaction in the early stage, including the graft degree of glycation and the available lysine or sugar, which are involved in the very beginning of the reaction. We also provide a detailed description of the most popular methods for determining graft sites and assessing different plant protein structures and functionalities upon non-enzymatic glycation. This review offers valuable insights for researchers and food scientists in order to develop plant-based protein ingredients with improved functionality.

    Abstract Background: Observational studies suggested that immune system disorder is associated with depression. However, the causal association has not been fully elucidated. Thus, we aim to assess the causality of the associations of immune cell profiles with risk of depression through Mendelian randomization analysis.
    Methods: We extracted genetic variances of immune cell traits from a large publicly available genome-wide association study (GWAS) involving 3757 participants and depression from a GWAS containing 246,363 cases and 561,190 controls of European ancestry. Inverse variance weighting (IVW) was performed as the MR primary analysis. Simultaneously apply MR-Egger and weighted median as supplementary enhancements to the final result. We further performed heterogeneity and horizontal pleiotropy test to validate the main MR results.
    Results: Five immunophenotypes were identified to be significantly associated with depression risk: CD27 on IgD
    Conclusion: Our findings shed light on the intricate interaction pattern between the immune system and depression, offering a novel direction for researchers to investigate the underlying biological mechanisms of depression.

    Abstract As a crucial technique for developing a smart city, traffic forecasting has become a popular research focus in academic and industrial communities for decades. This task is highly challenging due to complex and dynamic spatial-temporal dependencies in traffic networks. Existing works ignore continuous temporal dependencies and spatial dependencies evolving over time. In this paper, we propose Continuously Evolving Graph Neural Controlled Differential Equations (CEGNCDE) to capture continuous temporal dependencies and spatial dependencies over time simultaneously. Specifically, a continuously evolving graph generator (CEGG) based on NCDE is introduced to generate the spatial dependencies graph that continuously evolves over time from discrete historical observations. Then, a graph neural controlled differential equations (GNCDE) framework is introduced to capture continuous temporal dependencies and spatial dependencies over time simultaneously. Extensive experiments demonstrate that CEGNCDE outperforms the SOTA methods by average 2.34% relative MAE reduction, 0.97% relative RMSE reduction, and 3.17% relative MAPE reduction.

    Abstract Solid-state microwave heating holds potential in mitigating the issue of nonuniform heating commonly observed in magnetron-based microwave ovens. Previous work on solid-state application primarily focused on single-source microwave heating and modeling of dual-source heating with fixed frequency combinations. This study experimentally investigated the port interactions and heating performance of four different frequency shifting approaches (in range of 2.4 and 2.5 GHz, at an interval of 0.01 GHz), i.e., Fixed-frequency without shifting, Synchronized-shifting, Inverse-shifting and Distinct-shifting, in a dual-source microwave system under both stationary and rotatory conditions. Results showed that port interactions were dependent on the microwave frequency and load position, both of which significantly affected the microwave power efficiency. All three shifting strategies significantly improved heating performance compared to the Fixed-frequency heating. Additionally, the use of a turntable in our dual-source microwave configuration did not improve the heating uniformity in the context of various frequency shifting processes, suggesting that the inclusion of a turntable might be dispensable in solid-state microwave systems if proper multi-port frequency shifting strategy could deliver more uniform heating.
