    Abstract A method for the preparation of volatile compounds in Changyu XO brandy was established. The volatile compounds were extracted using liquid-liquid extraction and then were separated into two fractions, namely, the acidic/water-soluble fraction and the neutral/basic fraction. The neutral/basic fraction was furthermore separated into 4 fractions using silica gel normal phase chromatography, and each fraction was then concentrated and analyzed using gas chromatography-mass spectrometry (GC-MS). In comparison with the pure standards and the retention indices (RI(s)) reported in the literature, a total of 302 volatile compounds were identified in Changyu XO brandy, including 30 alcohols, 35 aldehydes and ketones, 20 carboxylic acids, 104 esters, 24 substituted benzenes and derivatives, 14 phenolic derivatives, 14 acetals, 16 furan derivatives, 22 terpenic and norisoprenoidic derivatives and 23 others. It was demonstrated that this method of preparation was effective for the separation and concentration of volatile compounds in Changyu XO brandy.

    Abstract BACKGROUND: Goose liver oil (GLO) is a solid–liquid mixture, rich in polyunsaturated fatty acids and high in nutritional value, but poor in fluidity and easily oxidized. Therefore, oil‐in‐water (O/W) Pickering emulsions of three polysaccharides and soy protein isolate (SPI) with GLO were prepared to improve the stability of it. RESULTS: Sodium dodecyl sulfate‐polyacrylamide gel electrophoresis (SDS‐PAGE), Fourier‐transform infrared spectroscopy, and zeta potential revealed that the SPI and complexes with konjac glucomannan, pectin, and guar gum (GG) ranged from 17 to 75 kDa, with the site of action being the –OH stretch and the amide group, and bound by hydrogen bonding. Adding konjac glucomannan and GG significantly increased the water contact angle of the SPI to 74.1° and 59.0°, respectively. Therefore, the protein–polysaccharide complexes could enhance the emulsion stability. In addition, the O/W Pickering emulsions with GLO had near‐Newtonian fluid rheological properties with a significant increase in apparent viscosity and viscoelasticity, forming a dual network structure consisting of a ductile and flexible protein network and a rigid and brittle polysaccharide network. The microstructure observation indicated that the O/W emulsions were spherical and homogeneous. The highest emulsification activity was observed for the SPI–GG–GLO emulsions, without significant delamination or flocculation and high oxidative stability after 7 days in storage. CONCLUSION: These results demonstrate that the construction of SPI–GG–GLO O/W Pickering emulsions can stabilize GLO even at high temperatures that promote oxidation. © 2023 Society of Chemical Industry.

    Abstract The pathogenesis of depression is complex, and the current means of medical diagnosis is single. Patients with severe depression may even have great physical pain and suicidal tendencies. Magnetoencephalography (MEG) has the characteristics of ultrahigh spatiotemporal resolution and safety. It is a good medical means for the diagnosis of depression. In this paper, multivariate transfer entropy algorithm is used to study MEG of depression. In this paper, the subjects are divided into the same brain region and the multichannel combination between different brain regions, and the multivariate transfer entropy of patients with depression and healthy controls under different EEG signal frequency bands is calculated. Finally, the significant difference between the two groups of experimental samples is verified by the results of independent sample t-test. The experimental results show that for the same combination of brain channels, the multivariate transfer entropy in the depression group is generally lower than that in the healthy control group, and the difference is the best in γ frequency band and the largest in the frontal region.

    Abstract It's well known that the toxicity of chemicals in the environment depends not only their concentrations, but more importantly, their bio-availability. Thus, the acute toxicity test of environmental water samples is of great importance in water quality evaluation. In this work, water acute toxicity was determined via SERS approach for the first time based on the reaction between Escherichia coli (E. coli) and p-benzoquinone (BQ). The E. coli was used as the subject of toxicity assay. Under normal conditions, the BQ molecules can be transformed into Hydroquinone (HQ) by the E. coli bacteria; subsequently, the BQ will continue to react with the resulting HQ to form Quinone hydroquinone (QHQ). This process could be impaired in the presence of many toxic chemicals. Bromide modified Ag NPs was then introduced for the highly sensitive SERS detection of the product (HQ and QHQ). Several key factors that may affect water acute toxicity evaluation have been explored, which include the initial BQ and E. coli concentration, the incubation time with BQ, and the sodium chloride concentration.     Abstract Bench blasting is the primary means of production in open-pit metal mines. The size of the resulting rock mass after blasting has a significant impact on production cost. Currently, the ore fragment size is obtained mainly through manual measurement or estimation with the naked eye, which is inefficient and inaccurate. This study proposes the U-CARFnet and U-Net models for segmenting blasting fragment images from open-pit mines based on an attention mechanism, residual learning module, and focal loss function. It compares this technique with traditional image segmentation ones and a variety of deep learning models to verify the efficacy of the proposed model. Experimental results show that the accuracy of the U-CARFnet model proposed in this paper reaches 97.11% in the performance evaluation, which shows better performance than the traditional image segmentation method. In this study, the U-CARFnet model is used in the application, and a superior performance is obtained, with an average segmentation error of 5.46%. The proposed approach provides an effective technique for statistically analyzing images of mine rock.
