    Abstract The geodynamic framework of Mount Etna volcano (Italy) is characterised by two superimposed tectonic domains: a compressional one, oriented N-S, and an extensional one, oriented approximately WNW-ESE. The combination of these two domains and the volcano activity, has generated a complex system of faults prevalently on the eastern flank of the volcano. The monitoring and analysis of the acceleration occurring on the eastern flank of Mount Etna is the keystone to understand the volcano-tectonic dynamics that involves the instability of this flank in a densely inhabited area.On the south-eastern flank the deformation is accommodated by several faults which have different kinematics and behaviours. The Fiandaca fault generated the 26 December 2018 earthquake, two days after the eruption of 24 December, which induced a clear post seismic deformation, detected by GNSS and InSAR data. In particular, we analyse the velocity field obtained by GNSS data of the permanent stations and discrete points. We discriminate the deformation occurred along the San Gregorio-Acitrezza fault, which is accommodated by the Nizzeti fault, and we analyse the post seismic deformation along the Linera fault. We analyse the Slow Slip Events (SSE) that are observed in the GNSS and InSAR time series in the vicinity of the Acitrezza fault and we quantify and discuss the tectonic origin of the Belpasso-Ognina lineament that we interpreted as a tear fault. Finally, we propose volcano-tectonic model of the south-eastern flank of Mount Etna which shows the anatomy of deformation occurred from 2016 to 2019.

    Abstract Research in the field of sustainable and healthy nutrition is calling for the application of the latest advances in seemingly unrelated domains such as complex systems and network sciences on the one hand and big data and artificial intelligence on the other. This is because the confluence of these fields, whose methodologies have experienced explosive growth in the last few years, promises to solve some of the more challenging problems in sustainable and healthy nutrition, i.e., integrating food and behavioral-based dietary guidelines. Focusing here primarily on nutrition and health, we discuss what kind of methodological shift is needed to open current disciplinary borders to the methods, languages, and knowledge of the digital era and a system thinking approach. Specifically, we advocate for the adoption of interdisciplinary, complex-systems-based research to tackle the huge challenge of dealing with an evolving interdependent system in which there are multiple scales-from the metabolome to the population level-, heterogeneous and-more often than not- incomplete data, and population changes subject to many behavioral and environmental pressures. To illustrate the importance of this methodological innovation we focus on the consumption aspects of nutrition rather than production, but we recognize the importance of system-wide studies that involve both these components of nutrition. We round off the paper by outlining some specific research directions that would make it possible to find new correlations and, possibly, causal relationships across scales and to answer pressing questions in the area of sustainable and healthy nutrition.

    Abstract Durum wheat pasta is considered a low-glycemic index (GI) food. In recent years, the interest in developing enriched pasta has increased. Since both the formulation and processing technologies may affect the GI, this study aimed to investigate the GI values of pasta products (pp) reported in the literature until 2020. GI values of pp analyzed following the ISO guidelines were included in this survey. A total of 95 pp were identified and, according to their formulation, classified into 10 categories (n, mean GI): category n 1: 100% refined wheat (35, 55); category n 2: 100% whole wheat (6, 52); category n 3: other cereal-based products (8, 52); category n 4: containing egg (5, 52); category n 5: gluten free (11, 60); category n 6: containing legumes (9, 46); category n 7: noodles and vermicelli (9, 56); category n 8: containing vegetable or algae (6, 51); category n 9: containing other ingredients (5, 37); category n 10: stuffed (1, 58). Overall, pasta is confirmed to be a medium-low-GI food, even if a high variability among or within each category emerged. The formulation of enriched pp able to elicit a controlled glycemic response could represent a strategy to improve the nutritional value of pasta.

    Abstract Convincing evidence indicates that the intake of inulin-type fructans, inulin and oligofructose, has beneficial effects on blood lipid changes in animals, although data in humans have been considered contradictory. We conducted a meta-analysis of available literature to quantify the effects in humans of dietary inulin-type fructans on serum triacylglycerols. Fifteen eligible randomized, controlled trials published from 1995 to 2005, for a total of 16 comparisons, were identified from the PubMed (National Library of Medicine, Bethesda, MD) and SCOPUS (Elsevier B.V., Amsterdam, NL) databases. Standardized mean effect sizes were calculated for net changes in serum triacylglycerol concentrations using random-effect model. The intake of inulin-type fructans was associated with significant decreases in serum triacylglycerols by 0.17 mmol/L (95%CI -0.33, -0.01; Z = 2.12, P = 0.04) or 7.5%. Given the limited number of studies, no specific effects for gender, amount fed, duration of the study, background diet, overweight, hyperlipidemia, or diabetes were further formally investigated, but, from the test for heterogeneity [chi(2) = 13.34, df = 15, (P = 0.55), I(2) = 0%], it appears that the effect of inulin-type fructans on circulating triacylglycerols is consistent across conditions. In conclusion, dietary inulin-type fructans significantly reduced serum triacylglycerols. The mechanisms, possibly related to colonic fermentation and/or incretin release from the distal gut, warrant further studies.

    Abstract Scope: The study evaluates the influence of flavan-3-ol structure on the production of phenolic catabolites, principally phenyl-γ-valerolactones (PVLs), and phenylvaleric acids (PVAs).
    Methods and results: A set of 12 monomeric flavan-3-ols and proanthocyanidins (degree of polymerization (DP) of 2-5), are fermented in vitro for 24 h using human faecal microbiota, and catabolism is analyzed by UHPLC-ESI-MS/MS. Up to 32 catabolites strictly related to microbial catabolism of parent compounds are detected. (+)-Catechin and (-)-epicatechin have the highest molar mass recoveries, expressed as a percentage with respect to the incubated concentration (75 µmol L
    Conclusion: The flavan-3-ol structure strongly affects the colonic catabolism of the native compounds, influencing the profile of PVLs and PVAs produced in vitro. This study opens new perspectives to further elucidate the colonic fate of oligomeric flavan-3-ols and their availability in producing bioactive catabolites.

    Abstract The eastern slope of Mt. Etna is characterised by shallow seismicity originating from normal-oblique faulting, Timpe Fault System, related to WNW-ESE regional extension. Recent research has demonstrated that in the fault population of Mt. Etna's eastern flank the minimum earthquake magnitude that will have a ground rupture effect is ca. 2.5. This system is characterised by high frequency seismic activity, due to thinned seismogenic crustal layer. This characteristic, together with the high density of the fault segments, does not always for identification of the segments responsible for the earthquake. The earthquakes, affecting the medium-lower eastern flank, have been historically reconstructed by macroseismic analysis and reported in a macroseismic database, and in recent decades by instrumental seismic registration, which provide the seismological parameters capable of evaluating focal mechanism, hypocentre and relative algorithms related to geometric parameters which control the growth of fault segments. In this paper, we present a methodology to evaluate the age of the rapid exhumation of the free-face fault plane of the NNW-SSE oriented normal fault segment named S. Tecla (Timpe Fault System). It consists of the measurement of the thalli species (Lichenometry method) in order to evaluate the parameters which characterise their growth. The seismic history of the S. Tecla Fault indicates eight certain events from 1865 to 2005 with 3.4 ÷ 4.7 Magnitude (De Guidi et al., 2012 and reference therein). We found evidence of two different recent rapid vertical deformation events at the base of the S. Tecla fault escarpment, the oldest 20 m long and 0.25 m in height, and the youngest with a 0.02 m high nude surface exposed. We have observed that there are thalli of Xanthoparmelia conspersa (Ehrh. Ex Ach.) Hale, colonizing part of the nude surface on the escarpment.     Abstract The quantity and quality of dietary fat and/or carbohydrate may alter one or more of the basic components of the insulin-glucose system, which in turn affect the pathways leading to alterations in glucose homeostasis and, possibly, to cardiovascular disease. This viewpoint article, reviewing some of the currently available tools aiming at quantifying the impact of dietary carbohydrates on the glucose-insulin homeostatic loop, highlights the unmet need of a more thorough assessment of the complex interaction between dietary factors and the glucose-insulin system. A novel index, the "β-cell burden index", may turn out to be a valuable tool to quantify the role played by the diet in shaping the risk of type 2 diabetes, cardiovascular disease and other metabolic and degenerative disorders, ideally orienting their prevention with strategies based on dietary modifications.

The displacement of this surface could be related to the seismic events occurring on 3rd August 1973 (3.8 M) in S. M. Ammalati area probably accompanied by intense post seismic deformation. The second and last event could be attributable to a 3.1 M seismic event occurring on 25th September 2014 (ISIDe, 2016).

    Abstract Multiple factors may affect the metabolic fate of carbohydrates. Today, well-standardised and accepted methods may allow for the definitions of the changes in the glucose and insulin curves following the ingestion of either carbohydrate-based and other foods. More debate is still raised on the clinical meaning of these classifications when used at a population level, while emphasis is raised on the approach to carbohydrate metabolism on an individual basis. Within these ranges of applications, other compounds, such as plant polyphenols, may favourably add synergic effects through the modulation of carbohydrate digestion and glucose metabolic steps, resulting in lowering postprandial glucose and insulin levels. Finally, a growing knowledge suggests that the balance of dietary fructose and individual physical activity represent the key point to address the compound towards either positive, energy sparing effects, or a degenerative metabolic burden. The carbohydrate quality within a whole dietary and lifestyle pattern may therefore challenge the individual balance towards health or disease.
