    Abstract "This interdisciplinary book combines digital technology with Eastern Philosophy to examine how the concept of Zhongyong in Confucianism can be used to coordinate digital technology with sustainable agriculture. Zhongyong comes from the connotation of moderate and sustainable in ancient Chinese culture. It is with this concept in mind that this book presents a novel collaboration between philosophy and computer technology to explain how Zhongyong can play an important part in realizing agricultural digitization within a circular economy in order to help solve the current food crisis. The book examines two popular, yet contradictory, digital technologies - Blockchain and the Green Data Center. It showcases how the use of traditional Chinese Zhongyong can promote the decentralization of Blockchain and the centralization of the Green Data Center and explains the advantages of using both technologies simultaneously. The book puts forward a digital circular agricultural framework that embeds both Blockchain and the Green Data Center through an actual case study.     Abstract Cardiovascular disease (CVD) has emerged as one of the leading causes of death worldwide. Elevated blood cholesterol and low-density lipoprotein levels are crucial risk factors that contribute to the development of CVD and other metabolic diseases. Dietary fat is believed to be the key factor in modulating circulating cholesterol levels. Thus, reducing dietary intake of fat appears to be an effective strategy to reduce the risk of heart disease. Also, excessive intake of fat and high-calorie foods is also related to the development of obesity, which contributes to the development of CVD. Therefore, the consumption of low-fat low-calorie foods is part of a healthier dietary pattern. However, simply removing fat from foods may lead to compromised overall quality and reduced acceptance of the food products. Thus, fat replacers have emerged as ideal alternatives to dietary fat, which can not only reduce the overall fat and calorie content of the foods but also mimic the physiochemical properties of dietary fat. Starch-based fat replacers are one kind of fat mimetic that can be produced either chemically as modified starch or enzymatically as maltodextrins. Both modified starch and maltodextrins have been demonstrated to have a promising ability to improve the overall quality of reduced-fat foods. Modified starch granules act directly as fat globules in modulating the structure and sensory characteristics of the foods, whereas maltodextrins can form thermoreversible gels. Both modified starch granules and maltodextrins can create a fat-like mouthfeel and therefore are potential fat replacers. This review article aims to discuss the following topics: (a) the effect of carbohydrates and fat on human cardiovascular health and other disease risks, (b) the functionality of starch-based fat replacers in foods, (c) the applications of starch-based fat replacers in various foods, and (d) the current and future market value of starch-based fat replacers.

    Abstract It is important that exopolysaccharides (EPS) of lactic acid bacteria (LAB) with antioxidant activities are produced economically, as it can confer beneficial effects on human health. A model of production possibility curve (PPC) was conducted to the optimal productivity of EPS for the purpose of economic production. The results revealed that the optimal productivity of EPS was approached to the set by NB (90%) and MRS (55%) broth from PPC with equation of PPC(Y) = 100–0.0335*EXP(0.08*X). The EPS productivity and yield of strain LaP with optimal production set (OPS) were, respectively, 291.0 ± 2.6 mg and 13.5 ± 0.7%, and the cost of OPS can be saved by about 31.6%, while that for strain BaP were 280.7 ± 2.5 mg and 13.0 ± 0.7%, respectively, and with 31.6% saved as well. Besides, the EPS produced from PPC mode has appropriate antioxidant ability with 34.6 ± 0.7% (LaP) and 37.6 ± 0.9 (%) (BaP) of DPPH radical scavenging activity under the economic cost. The strategy of controlling the medium composition not only could improve the productivity of EPS, but also enhance the antioxidant effects of EPS. Both LaP and BaP with antioxidant potential may be useful as supplements in the health‐promoting food industry.

    Abstract Although prosocial behavior is positively associated with one's well-being, researchers have yet to reach a consensus on the role played by basic psychological need satisfaction (BPNS) in this association. A systematic review of the existing empirical literature is conducted in this article to summarize and synthesize the relationship between prosocial behavior and well-being, with a special emphasis on the multifaceted role of BPNS (i.e. mediation, moderation, and concurrent mediation and moderation). Nineteen articles have been identified that meet the criteria of the research focus, being empirical and peer-reviewed. Results suggest that BPNS can act as a mediator, moderator, and differing mediation and moderation roles. Prosocial behavior can both individually and jointly satisfy the three needs for autonomy, competence, and relatedness, thus enhancing well-being. Moreover, the positive correlation between prosocial behavior and well-being can be augmented by a high level of satisfaction of one or multiple needs. Furthermore, those who have higher satisfaction of autonomy, competence, or relatedness display a greater increase in well-being after engaging in prosocial behavior, which can be mediated by BPNS. Drawing on these findings, the current body of work is evaluated in terms of its strengths and weaknesses, and potential future directions are explored.

    Abstract As the digital revolution deepens, the digital economy (DE) is reshaping the global industrial structure (IS). This paper utilizes data from 280 Chinese cities between 2007 and 2020 to conduct an in-depth analysis of how DE propels the upgrading of IS and explores the role of human capital (HC) in this process. The research indicates that DE significantly fosters the optimization of IS. Additionally, it was discovered that the growth of HC plays a pivotal mediating role in this evolution, complementing existing research on the relationship between higher education and industrial upgrading. By adopting spatial econometric methods, this study unveils the spillover effects of DE in geographical space, identifying a positive influence on the industrial upgrading of surrounding regions. The paper also confirms the nonlinear characteristics of DE's impact on IS upgrading, which manifests as a pronounced inverted U-shaped trend, marking a novel discovery. Further findings suggest that in regions with more advanced artificial intelligence technologies, the impact of DE on industrial optimization is more significant, highlighting the role of regional disparities in the digital transformation. In conclusion, the paper proposes policy recommendations based on the research findings to facilitate the development of DE and the elevation of IS levels, thereby promoting high-quality economic growth.
