    Abstract The objective of this study is to investigate the effects of pretreatments on the quality of vacuum-fried shiitake mushroom slices. Four different pretreatments addressed in this study were (1) blanching as control, (2) blanching and osmotic dehydration with maltodextrin (MD) solution, (3) blanching, osmotic dehydration, and coating with sodium carboxymethyl cellulose (CMC), (4) blanching and osmotic dehydration, followed by freezing. All samples were pretreated and then fried in palm oil at 90°C with vacuum degree of −0.095 MPa for 30 min. The results showed that pretreatments significantly (p < 0.05) affected the moisture content, oil content, color, water activity aw, total phenolic content, and sensory evaluation of shiitake mushroom chips. The blanching, osmotic dehydration, and coating pretreatment could improve color and sensory evaluation and also minimize the oil uptake of fried chips, whereas this treatment caused the highest reduction of total phenolic contents. There were no significant (p > 0.05) differences of fried chip in the texture among the four different pretreatments. The aw values of all the fried chips were less than 0.38, indicating that the products had a long shelf life. Therefore, the blanching, osmotic dehydration, and coating pretreatment before vacuum frying was the most suitable pretreatment for vacuum-fried shiitake mushroom chips.

    Abstract In this study, terahertz time-domain spectroscopy (THz-TDS) was proposed to identify coffee of three different varieties and three different roasting degrees of one variety. Principal component analysis (PCA) was applied to extract features from frequency-domain spectral data, and the extracted features were used for classification prediction through linear discrimination (LD), support vector machine (SVM), naive Bayes (NB), and k-nearest neighbors (KNN). The classification effect and misclassification of the model were analyzed via confusion matrix. The coffee varieties, namely Catimor, Typica 1, and Typica 2, under the condition of shallow drying were used for comparative tests. The LD classification model combined with PCA had the best effect of dimension reduction classification, while the speed and accuracy reached 20 ms and 100%, respectively. The LD model was found with the highest speed (25 ms) and accuracy (100%) by comparing the classification results of Typica 1 for three different roasting degrees. The coffee bean quality detection method based on THz-TDS combined with a modeling analysis method had a higher accuracy, faster speed, and simpler operation, and it is expected to become an effective detection method in coffee identification.

    Abstract College student entrepreneurship is a complex and dynamic process, in which the potential risks faced by entrepreneurial enterprises are interactive and diverse. The changes in risk assessment for college student entrepreneurship are also dynamic and nonlinear and are affected by many factors, which make the risk assessment process for college student entrepreneurship quite complicated. Big data analysis technology is a new product formed under the background of cloud computing and Internet technology, which has the characteristics of large data scale, multiple data types, and strong data value and provides more technical support for the researches on the risk assessment algorithm for college student entrepreneurship. On the basis of summarizing and analyzing previous research results, this article expounded the research status and significance of the risk assessment algorithm for college student entrepreneurship, elaborated the development background, current status, and future challenges of big data analysis technology, introduced the basic principles of support vector machine (SVM) and hierarchical analytic process, constructed a risk assessment model for college student entrepreneurship based on big data analysis, analyzed the risk factors and assessment indicators of the entrepreneurial model, proposed a risk assessment algorithm for college student entrepreneurship based on big data analysis, performed the discrimination coefficient calculation and comprehensive correlation optimization, and finally conducted a case experiment and its result analysis. The study results show that the risk assessment algorithm for college student entrepreneurship based on big data analysis can effectively realize the comprehensive management of risk factors, make full use of the value of assessment parameter data, and significantly improve the accuracy and efficiency of the risk assessment for college student entrepreneurship, providing more technical support for the researches on the risk assessment algorithm for college student entrepreneurship. The study results of this article provide a reference for further researches on the risk assessment algorithm of college student entrepreneurship based on big data analysis.

    Abstract Clinical relevance: The association between myopia and body stature is of great significance for understanding prevention and control of myopia. It has been extensively studied in previous studies but without consistent conclusions.
    Background: The aim of this study is to investigate the association between body stature and prevalence of reduced visual acuity in high school graduates in Hangzhou, China.
    Methods: 50,620 high school graduates who finished the physical examination of the national college entrance examination in 2020 were included. Data were derived from the database of physical examination of the national college entrance examination. Height and weight were measured, and body mass index (BMI) was calculated according to the general formula. Visual acuity was measured by the standard logarithmic visual acuity chart.
    Results: The prevalence of reduced visual acuity was 90.38% in high school graduates. Girls had a higher prevalence of reduced visual acuity than boys (93.07% vs 87.60%,
    Conclusions: The prevalence of reduced visual acuity was inversely associated with height in both boys and girls, and there was a U-shaped association with BMI only in boys.

    Abstract Superconductivity and ferroelectricity,representing two distinct forms of ordered states, are typically not found together in the same system, making it even more difficult to create a connection between them. Here, supported by first-principles calculations, we propose that Anderson-Blount's ferroelectric-like metal can be manifested in electron-doped ferroelectric Pca2$_1$ HfO$_2$. In this system, polar phonons and consequently ferroelectricity are not affected by the presence of itinerant electrons. We find that a nonpolar optical phonon, being strongly coupled to doped electrons, can acquire a pronounced electron-phonon coupling strength to activate conventional Bardeen-Cooper-Schrieffer superconductivity. The displacements of polar oxygen atoms in Pca2$_1$ HfO$_2$ create a link between ferroelectricity and superconductivity, enabling a tunable superconducting temperature ranging approximately from 10 to 30 Kelvin. Owing to hafnia's compatibility with silicon, we suggest HfO$_2$-based ferroelectric superconductors present an opportunity to construct high-performing hybrid integrated systems utilizing switchable quantum states.

    Abstract There is no converging evidence on how a word's semantic transparency affects morphemes' potential semantic activation. The inconsistent results may be due to the limitation of traditional univariate analyses, in which the semantic transparency was treated as discrete categories. In the current study, Chinese two-character words were used as stimuli and functional magnetic resonance imaging (fMRI) techniques were combined with a priming paradigm. Unlike most previous studies, the multivariate representation similarity analysis (RSA) was used to treat semantic transparency as a continuous variable. The RSA results showed that widespread regions in the frontal-parietal-temporal network represent the semantic perception of characters in all words and transparent words, but no brain areas were identified in opaque words. Unlike RSA results, univariate analyses showed no significant difference between the opaque and transparent words. These results suggest that RSA is more suitable to examine the neural mechanism related to continuous variables such as semantic transparency.

    Abstract To provide a theoretical basis for the frozen storage of potato-oat composite dough and its products, this investigation examines changes in the quality of potato-oat composite dough and its resulting product during freeze-thaw cycles. The study measured key aspects such as moisture content, dynamic rheological properties, water state, protein secondary structure, color, and sensory assessment. The influence of these factors on the product's quality is analyzed. The findings revealed that the freeze-thaw treatment caused a reduction in water content, freezable water, and deeply bound water, as well as an increase in weakly bound water, β-sheet, random coil, and α-helix, and a decreased β-turn of the potato-oat composite dough. Additionally, the dough treated by freeze-thaw cycles resulted in darker color, and the sensory properties of the product were affected significantly after exceeding three freeze-thaw cycles.     Abstract Hyperhomocysteinemia (HHcy) is considered to be an independent risk factor for cardiovascular diseases, but the molecular mechanisms underlying its pathogenesis are not fully understood. Endothelial dysfunction is a key initiating factor in the pathogenesis of atherosclerosis, which is commonly observed in almost all HHcy-induced vascular diseases. HHcy promotes oxidative stress, inhibits nitric oxide production, suppresses hydrogen sulfide signaling pathway, promotes endothelial mesenchymal transition, activates coagulation pathways, and promotes protein N-homocysteination and cellular hypomethylation, all of which can cause endothelial dysfunction. This article reviews the specific links between HHcy and endothelial dysfunction, and highlights recent evidence that endothelial mesenchymal transition contributes to HHcy-induced vascular damage, with a hope to provide new ideas for the clinical treatment of HHcy-related vascular diseases.

    Abstract Background: During past decades, there was a positive trend in growth and nutrition status of adolescents in China, but there was significant regional disparity. The purpose of this study is to investigate the trends in growth and nutritional status of high school graduates in Hangzhou between 2011 and 2020.
    Methods: High school graduates (Grade 12) who finished the physical examination of the national college entrance examination between 2011 and 2020 (n=481,353)were included in this study. Data were obtained from the database of physical examination of the national college entrance exam. Height and weight were measured; body mass index (BMI) was calculated from height and weight. Thinness, overweight and obesity were defined according to the International Obesity Task Force criteria. For the vast majority of the high school graduates were 18 years old or nearly 18 years old, the cutoffs of 18 years were adopted. Those are 18.5, 25 and 30 kg/m
    Results: There was a significant growth trend in height, weight and BMI in both sexes (P < 0.001). Height increased by 1.80 cm in boys and 1.45 cm in girls. Weight increased by 4.62 kg in boys and 2.51 kg in girls. BMI increased by 1.09 kg/m
    Conclusions: There is a positive trend in growth and nutritional status of high school graduates in Hangzhou. However, there is still a considerable prevalence of thinness, it indicates a double burden of undernutrition and overnutrition.
