Abstract Abstract: Food intolerances are classified and defined. Specific disorders related to nutrient substances are reviewed, with emphasis on carbohydrates, amino acids and proteins, lipids, minerals, and vitamins. Multiple and idiopathic food intolerances are treated briefly; a systematic approach to food intolerance therapy is outlined.

Abstract Abstract: Clinical nutrition should be considered a medical specialty. Nutritional deficiency disease epidemics have been successfully prevented. Clinical nutrition is therefore relegated to the medical background. Newer advances in medicine overshadow the past success of clinical nutrition. However, developments have been made toward understanding the action mechanisms in vitamins A, D, E, and K. Dietary fiber's role in disease and the relationship between dietary lipid and coronary artery disease are being studied. A preventive diet may be the answer to major health problems such as atherosclerosis, obesity, diabetes, hypertension, osteoporosis, cancer, alcoholism, and drug addiction. The exploration of clinical nutritional aspects of chronic, disabling, lethal diseases depends on the recognition of clinical nutrition as a medical specialty.

Abstract Abstract: Basic biochemical principles of the regulation of metabolism are presented. Mechanisms that govern intracellular reactions in mammals which have evolved for metabolic control and fundamental theorems of theoretical biology and nonequilibrium thermodynamics are reviewed. Regulatory mechanisms of noncovalent forces, interactions with water, enzyme activity and degradation, coenzymes, protein biosynthesis, DNA replication, phospholipid-protein interactions, membrane structure, membrane-bound enzymes, transport systems, secretion and hormones are discussed. The role of compartmentation in metabolic regulation is also described. A final chapter examines the biochemical basis of disease.

Abstract Extract: To determine if vitamin D deficiency would retard the ability of muscle to hypertrophy in response to mechanical stress, the gastrocnemius tendon was severed on one leg of rats in each of three groups, the treatment of which differed only in the amount of vitamin D in the diet. After 1 week the increased size of the soleus and plantaris in the leg in which the gastrocnemius was severed, relative to that of the sham operated leg, was determined for each rat. Despite differences in body weight and serum calcium among the groups, no difference in the percent of muscle hypertrophy was found. Muscle hypertrophy can occur in response to local mechanical forces despite a deficient hormonal environment that otherwise retards growth.
