    Abstract In the U.S. market place, there are many examples of precooked poultry products designed to be reheated in a microwave oven and, to a lesser extent, fish products such as tilapia. However, few U.S. catfish products are designed to be microwave cooked or reheated. The first objective of this study was to examine the properties of microwave cooked raw frozen catfish fillets and oven precooked (to 62.8°C) frozen fillets and then reheated by microwave cooking. The second objective was to evaluate changes in properties as a consequence of treatment with a commercial polyphosphate blend (Individually Quick Frozen [IQF]). The sample analysis included weight loss, proximate content, color (CIE L*a*b*), pH, mechanical texture (hardness), and lipid peroxidation (TBARS) measurements. Frozen fillets which contained polyphosphate showed <4% moisture loss after microwave cooking, relative to a 12% moisture loss for fillets without polyphosphate. A large cooking loss of ~40% was observed for precooked fillets after microwave cooking, correlated with a higher percent moisture loss (11% and 13% for fillets with and without polyphosphate, respectively) to comparable samples that were not precooked. For both types of fillets, an increased amount of yellow color was observed for precooked fillets after microwave cooking, relative to comparable fillets that were not precooked. Fillet hardness determined by peak force revealed an overall harder texture (~1.1–1.8 times) for fillets without polyphosphate than fillets with polyphosphate. This study will be used to develop precooked catfish products that can be reheated in a microwave oven.

    Abstract The growth of the blueberry industry in the past three decades has been remarkably robust. However, a labor shortage for hand harvesting, increasingly higher labor costs, and low harvest efficiencies are becoming bottlenecks for sustainable development of the fresh market blueberry production. In this study, we evaluated semi-mechanical harvesting systems consisting of a harvest-aid platform with soft fruit catching surfaces that collected the fruit detached by portable, hand-held, pneumatic shakers. The softer fruit catching surfaces were not glued to the hard sub-surfaces of the harvest-aid platform, but suspended over them. Also, the ergonomic aspect of operating powered harvesting equipment was determined. The pneumatic shakers removed 3.5 to 15 times more fruit (g/min) than by hand. Soft fruit catching surfaces reduced impact force and bruise damage. Fruit firmness was higher in fruit harvested by hand compared to that by pneumatic shakers in some cultivars. The bruise area was less than 8% in fruit harvested by hand and with semi-mechanical harvesting system. The percentage of blue, packable fruit harvested by pneumatic shakers comprised as much as 90% of the total, but less than that of hand-harvested fruit. The ergonomic analysis by electromyography showed that muscle strain in the back, shoulders, and forearms was low in workers operating the light-weight, pneumatic shakers that were tethered to the platform with a tool balancer. The new harvesting method can reduce the labor requirement to about 100 hour/hectare/year and help to mitigate the rising labor cost and shortage of workers for harvesting fresh-market quality blueberries.

    Abstract Understanding the structural behavior of solid hydrogen under high pressures is crucial for uncovering its unique properties and potential applications. In this study, starting from the phase I of solid hydrogen-free-rotator hcp structure, we conduct extensive ab initio molecular dynamics calculations to simulate the cooling, heating, and equilibrium processes within a pressure range of 80-260 GPa. Without relying on any structure previously predicted, we identify the high-pressure phase structures of solid hydrogen as P21/c for phase II, P6522 for phase III, and BG1BG2BG3 six-layer structure for phase IV, which are different from those proposed previously using the structure-search method. The reasonability of these structures are validated by Raman spectra and x-ray diffraction patterns by comparison with the experimental results. Our results actually show pronounced changes in the c/a ratio between phases I, III, and IV, which hold no brief for the experimental interpretation of an isostructural hcp transformations for phases I-III-IV.

    Abstract The intersection of psychology and English teaching is profound, as the application of psychological principles not only guides specific English instruction but also elevates the overall quality of teaching. This paper takes a multimodal approach, incorporating image, acoustics, and text information, to construct a joint analysis model for English teaching interaction and psychological characteristics. The novel addition of an attention mechanism in the multimodal fusion process enables the development of an English teaching psychological characteristics recognition model. The initial step involves balancing the proportions of each emotion, followed by achieving multimodal alignment. In the cross-modal stage, the interaction of image, acoustics, and text is facilitated through a cross-modal attention mechanism. The utilization of a multi-attention mechanism not only enhances the network's representation capabilities but also streamlines the complexity of the model. Empirical results demonstrate the model's proficiency in accurately identifying five psychological characteristics. The proposed method achieves a classification accuracy of 90.40% for psychological features, with a commendable accuracy of 78.47% in multimodal classification. Furthermore, the incorporation of the attention mechanism in feature fusion contributes to an improved fusion effect.

    Abstract Here, we present a protocol for the analysis of barometric pressure data from multiple stations for the globally propagating spherical shockwaves generated by catastrophic explosions. We demonstrate the analytical procedure using the Tonga underwater volcano eruption of January 2022. We also present a protocol to make a data recorder using off-the-shelf electronic components for barometric pressure measurements at ∼1 Hz. The data recorder and the analysis protocol can be used to study similar future catastrophic events. For complete details on the use and execution of this protocol, please refer to Li (2022).
