Abstract This e-book is the result of a panel organized in the Fifth European Congress of African Studies (ECAS 5) that took place in Lisbon in June 2013. We thought of organizing this panel on "Press Freedom and Right to Information in Africa" since the question of freedom, especially press freedom, is presently extremely important in all African countries. However, it is not yet well known, both in the academic context and by the public

Abstract A wide variety of yeasts have been involved in traditional fermented foods, and potentially contributed to the development of product properties. The existence of indigenous yeasts in dadih, a traditionally fermented form of buffalo milk of West Sumatera, has been reported but an accurate identification is still required to be conducted. This study was aimed to identify yeasts isolated from dadih using a molecular approach, and to evaluate their lactate utilization. A total of 51 isolates were characterized and identified as Pichia jadinii and Candida stellimalicola using PCR amplification of the 5.8S - internal transcribed spacer region combined with restriction fragment length polymorphism (RFLP) analyses and gene sequencing. The former species were the dominant one in this tested product. Their ability to utilize lactate was demonstrated, indicating that they could modify the sensory characteristics of dadih, and hence interact with the indigenous lactic acid bacteria in dadih. The restriction profiles of the dadih yeasts can be used as a data base for rapid identification of yeasts in the future. Further work is still needed to elucidate the dadih yeast ecology.

Abstract Extracts of green coffee fruits (GCFEs), either of the Arabica or Robusta variety, obtained by percolation with a 68% (w/w) aqueous ethanol solution using a 0.9:10 (w/w) solid-to-solvent ratio, were tested in this study as antioxidant additives to delay sunflower oil oxidation. In addition, safety of the major secondary metabolites of the extracts was investigated by in silico modeling. For this purpose, GCFEs were spray dried either as such or microencapsulated with a 1:1 (w/w) maltodextrin and gum Arabic mixture as wall material. The encapsulation efficiencies of Arabica and Robusta GCFEs were as high as 96.9 ± 0.04 and 97.36 ± 0.03% and the chlorogenic acid retentions 59.61 ± 1.3 and 73.72 ± 2.49%, respectively. The HPLC-DAD analysis revealed higher contents of total chlorogenic acids and caffeine but a lower content of trigonelline in the Robusta GCFE compared with the Arabica one. The ACD/I-Lab, AdmetSAR, and pKCSM computational tools allowed excluding, for GCFEs major compounds, any toxicological potential in terms of Ames toxicity, carcinogenicity, hERG inhibition, hepatotoxicity, reproductive toxicity and skin sensitization. Foodstuff application of GCFE powders demonstrated that microencapsulated GCFEs were more effective in delaying sunflower oil oxidation than free GCFEs and butylated hydroxytoluene as a synthetic antioxidant. These results suggest the use of microencapsulated GCFE as a source of natural antioxidants to stabilize food products, especially unsaturated vegetable oils.

Abstract Desorption electrospray ionization (DESI) mass spectrometry is an emerging technology for direct therapeutic drug monitoring in dried blood spots (DBS). Current DBS methods require manual application of small molecules as internal standards for absolute drug quantification. With industrial standardization in mind, we superseded the manual addition of standard and built a three-layer setup for robust quantification of salicylic acid directly from DBS. We combined a dioctyl sodium sulfosuccinate weave facilitating sample spreading with a cellulose layer for addition of isotope-labeled salicylic acid as internal standard and a filter paper for analysis of the standard-containing sample by DESI-MS. Using this setup, we developed a quantification method for salicylic acid from whole blood with a validated linear curve range from 10 to 2000 mg/L, a relative standard deviation (RSD%) ≤14%, and determination coefficients of 0.997. The limit of detection (LOD) was 8 mg/L and the lower limit of quantification (LLOQ) was 10 mg/L. Recovery rates in method verification by LC-MS/MS were 97 to 101% for blinded samples. Most importantly, a study in healthy volunteers after administration of a single dose of Aspirin provides evidence to suggest that the three-layer setup may enable individual pharmacokinetic and endpoint testing following blood collection by finger pricking by patients at home. Taken together, our data suggests that DBS-based quantification of drugs by DESI-MS on pre-manufactured three-layer cartridges may be a promising approach for future near-patient therapeutic drug monitoring.

Abstract The second epidemiologic transition is defined as “the age of receding pandemics”, wherein mortality de clines, life expectancy increases, and population growth occurs. The major causes of death also shifted from predominantly acute infectious diseases to degenerative and “man-made” diseases (Omran, 1983). The aim of this study was to determine the timing of the transition in Zürich (Switzerland) and to investi gate patterns of tuberculosis mortality during this period. This is one of the first studies to specifically in vestigate the timing of the second transition in Zürich, Switzerland. The data sources for this study were Swiss records of mortality from the Staatsarchiv (Canton Archives), Stadtarchiv (City Archives) and a published volume of State Statistics (Historische Statistik der Schweiz). The changes in mortality through time were addressed for all causes of death in the city ofZürichfor the years 1893 to 1933 that is, the time including the second epidemiological transition. After 1933 the structure of the mortality data collec tion changed as the responsibility was transferred away from the canton archives. Mortality from tuber culosis was then examined in greater detail and compared with changes in living standards as well as population density occurring at the time.

Abstract: The objective of this study was to evaluate the effect of addition of different levels of cottonseed (0, 14.35, 27.51 and 34.09 kg/100 kg) in the diet of Nellore steers on the meat characteristics. Thirty-six steers (average initial body weight of 333.50 ...

Abstract The objective of this study was to evaluate the effect of addition of different levels of cottonseed (0, 14.35, 27.51 and 34.09 kg/100 kg) in the diet of Nellore steers on the meat characteristics. Thirty-six steers (average initial body weight of 333.50 and average age of 20 months) were kept in feedlot stalls for 94 days, each stall with three animals. The experiment was a completely randomized design with four treatments and nine replications. The values of protein, fixed mineral residue, shear force, lipid oxidation, meat color and fat color were similar among the treatments. The increase of the cottonseed levels in the diet reduced the amount of intramuscular fat and increased the moisture content in the meat linearly. Meat aroma and flavor were negatively influenced when cottonseed addition was greater than 27.51 and 34.09 kg/100 kg of the diet, respectively. Cottonseed diet did not modify the concentration of conjugated linoleic acid, saturated fatty acids or total unsaturated fatty acids, but linearly reduced the concentration of monounsaturated fatty acids in the meat.
