    Abstract Omega-3 Delivery Systems: Production, Physical Characterization and Oxidative Stability offers the most recent updates for developing, characterizing, and stabilizing both traditional and novel omega-3 delivery systems, including their final incorporation into food matrices and physicochemical changes during digestion. The book brings chapters on novel omega-3 delivery systems (e.g., high-fat emulsions, Pickering emulsions, electrosprayed capsules, and solid lipid nanoparticles), the application of advanced techniques to evaluate physical and oxidative stabilities (e.g., SAXS, SANS, ESR, and super-resolution fluorescence microscopy), and new developments of food enrichment and physicochemical changes during digestion. The book provides a unique multidisciplinary and multisectoral approach, i.e., featuring authors from industry and academy. Long chain omega-3 polyunsaturated fatty acids (PUFA) present numerous health benefits; however, the consumption of natural products rich in omega-3 PUFA (e.g., fish, krill, and algae) is not enough to reach the daily-recommended values.     Abstract This article revisits the fluctuation-dissipation relationship of a generalized Brownian particle constrained in a harmonic potential and immersed in a thermal bath whose degrees of freedom also interact with the external field. The generalized Langevin equation put forth herein keeps its original form. The different terms now depend on a compound strength related to those of the field and bath oscillators. The resulting theorem keeps Kubo's original form with the memory kernel depending on the frequency of the field. It has the consequence that friction is not a constant but is a function of the field frequency as predicted by molecular dynamics simulations. The position particle distribution and the Fokker-Planck equation associated with the generalized Langevin equation are also derived.

    Abstract The reaction mechanism of several Williamson‟s ether syntheses have been studied using density functional theory with triple-ζ basis sets. These computations show that the synthesis of geometrically-strained epoxide from deprotonated halohydrins is due to the combined effects of favourable solvation of the products, higher bond enthalpy of C-O bonds vs. C-Cl bonds and increased vibrational entropy of the epoxide vs. the original halohydrin. Examination of the pathways leading to the formation of larger cyclic ethers revealed that the experimentally-observed preference for the formation of five-atom rings over six-atom-rings is due to the preference of the intervening methylene groups for staggered conformations, which entails that the alkyl carbon in the reactant state leading to the six-atom cyclic ether is initially not properly aligned with the attacking alkoxide. Study of the competing elimination reactions further shows that during the synthesis of five-atom cyclic ethers the competing elimination reaction is strongly disfavoured due to steric effects. The temperature dependence of both reactions favours elimination over SN2 as temperature rises, though only when the alkoxide and the halogen moieties are not part of the same carbon chain.

    Abstract The work and heat distribution densities of a classical Brownian particle immersed in a heat bath and interacting with an external field have been extensively analyzed from different approaches. In this article, a previous method based on basic principles of stochastic dynamics is extended to derive these functions. The starting point is the inertial Langevin equation and the external field is an off-center harmonic potential driven by an external protocol. Unlike previous works where the driving is arbitrary, the so-called optimal protocol that minimizes the mechanical work is used instead. The corresponding work and heat distributions are derived through a procedure based on getting a generic Fokker-Planck equation indistinctly of the variable under consideration. The work distribution is calculated for different initial conditions and values of the friction coefficient of the thermal fluid ranging from the periodic or very low-underdamped mode up to the overdamped regime. It is a Gaussian as that of previous experiments of a particle trapped in an optical tweezers moved at constant velocity. Some aspects about the heat distribution is analyzed in terms of the statistical features of the non-Gaussian noise accompanying its dynamics to give an account of experimental results. It is concluded that the easiness in calculating the work distribution cannot be applied to heat. It requires numerical calculations.

    Abstract Resistance to trimethoprim and other antibiotics targeting dihydrofolate reductase may arise in bacteria harboring an atypical, plasmid-encoded, homotetrameric dihydrofolate reductase, called R67 DHFR. Although developing inhibitors to this enzyme may be expected to be promising drugs to fight trimethoprim-resistant strains, there is a paucity of reports describing the development of such molecules. In this manuscript, we describe the design of promising lead compounds to target R67 DHFR. Density-functional calculations were first used to identify the modifications of the pterin core that yielded derivatives likely to bind the enzyme and not susceptible to being acted upon by it. These unreactive molecules were then docked to the active site, and the stability of the docking poses of the best candidates was analyzed through triplicate molecular dynamics simulations, and compared to the binding stability of the enzyme-substrate complex.
