    Abstract The usage of the term “free verse” is perhaps the most controversial issue after Jahiliyyah’s poetry in the history of Arabic poetry. The primary discussion topics in this art revolve around who used the first free verse in his/her poetry, the ideal sample was given by whom and what should we call this form. First, the blank verse and the prose poetry, which are the pioneering literary studies to prepare using free verse, are given in terms of creating a basic in understanding of modern Arabic poetry in this article, with the leaders’ names who revealed significant studies in their field. And then, Ahmed Zaki Abu Shadi, Ali Ahmad Bakathir, Louis Awad who can be qualified as important milestones in the transition to the free verse were examined under separate headings. Then, Bedr Şâkir es-Seyyâb and Nâzik elMelâ’ike who revealed the most significant studies in their field and their poems that are alleged as “the first free verse” were investigated. Finally, the debates on the issues regarding the studies in this field with respect to the desire to be the pioneers and their efforts to give a name to the works are mentioned.

    Abstract This paper reports five novel PDI dimer type electron transport materials (ETMs) employing o-indoloquinoxaline (o-Iq), m-indoloquinoxaline (m-Iq), and cibalackrot (Ci) groups as the core building blocks and presents the twisted structures of PDI dimers coded as PDI-NHR-o-Iq, PDI-o-Iq, PDI-NHR-m-Iq, PDI-m-Iq and PDI-NHR-Ci dyes (see Scheme 1 and 2). We have systematically compared their photophysical, electrochemical, and optoelectronic properties with respect to the reference dye (2PDI-NHR), which is directly connected of two PDI planes. Their calculated HOMO-LUMO energy levels are sufficient for charge transfer to the perovskite material so that structure-photovoltaic performance relationship of synthesized ETM dyes can be evaluated. When the binding position of indoloquinoxaline group between PDI rings are changed from o- to m- positions, most of the photophysical and electrochemical properties of PDI dimer are dramatically changed, finally improving the photovoltaic performances.

    Abstract Molecular engineering of additives is a highly effective method to increase the efficiency of perovskite solar cells by reducing trap states and charge carrier barriers in bulk and on the thin film surface. In particular, the elimination of undercoordinated lead species that act as the nonradiative charge recombination center or contain defects that may limit interfacial charge transfer is critical for producing a highly efficient triple-cation perovskite solar cell. Here, 2-iodoacetamide (2I-Ac), 2-bromoacetamide (2Br-Ac), and 2-chloroacetamide (2Cl-Ac) molecules, which can be coordinated with lead, have been used by adding them into a chlorobenzene antisolvent to eliminate the defects encountered in the triple-cation perovskite thin film. The passivation process has been carried out with the coordination between the oxygen anion (-) and the lead (+2) cation on the enolate molecule, which is in the resonance structure of the molecules. The Spiro-OMeTAD/triple-cation perovskite interface has been improved by surface passivation by releasing HX (X = I, Br) as a byproduct because of the separation of alpha hydrogen on the molecule. As a result, a solar cell with a negligible hysteresis operating at 19.5% efficiency has been produced by using the 2Br-Ac molecule, compared to the 17.6% efficiency of the reference cell.

    Abstract Bu çalışmada, farklı çözündürme yöntemlerinin, dondurulmuş midye ve karides örneklerinin mikrobiyal, fiziksel ve duyusal kalitesi üzerine etkileri araştırılmıştır. Çözündürme işlemi, buzdolabında (B4: 4±1ºC), oda sıcaklığında (O22: 22±1ºC), ılık suda (I30: 30±1ºC) ve sıcak suda (S55: 55±1ºC) gerçekleştirilmiştir. Toplam mezofilik bakteri sayısı, her iki örnekte de en düşük B4 (2,74 log KOB/g) ve S55 (3,35 log KOB/g) yöntemleri ile çözündürülen gruplarda tespit edilirken, en yüksek I30 grubunda bulunmuştur. Öte yandan en yüksek değerler ise her iki gıda örneğinde de I30 grubunda bulunmuştur. Psikrofilik bakteri sayısı ise, en düşük S55 ile çözündürülen grupta tespit edilmiştir. Renk analizi sonuçlarına göre, en düşük L* değeri her iki örneğin I30 gruplarında bulunurken, oksidasyon ile ilişkilendirilen b* değeri ise en yüksek, midye örneklerinde O22 ve karides örneklerinde ise B4 grubunda tespit edilmiştir. En düşük su aktivitesi değeri midye örneğinde B4 grubunda bulunurken, karides örneğinde 022 grubunda tespit edilmiştir. Duyusal analiz sonuçlarına göre; buzdolabında çözündürülen her iki örneğin genel kabul edilebilirlik puanı en yüksek bulunmuştur. Sonuç olarak, kalite parametrelerinin tamamı değerlendirildiğinde her iki grupta da, buzdolabında ve sıcak suda çözündürmenin en iyi yöntem olduğu belirlenmiştir.

    Abstract In this study, an anti-oxidant nanoformulation to prevent the oxidation of salmon was developed using rosmarinic acid (RA). Minced salmon samples (MSs) were treated with 8.10-3 g (RAT1) and 16.10-3 g (RAT2) RA-loaded nanoparticles for 100 g MS rosmarinic acid, separately. The thiobarbituric acid (TBA) values of control (C), RAT1, and RAT2 samples stored at 4 °C were found as 2.995, 1.350, and 0.994 mg MDA/kg; respectively, after 9 days. While the initial free fatty acid (FFA) value of C samples was 2.011%, RAT1 and RAT2 were found as 2.765% and 2.494%, respectively. The 2,2,diphenylpicrylhydrazyl (DPPH) values of MSs treated with RAT1 and RAT2 were observed to be higher than that of C samples. C samples were evaluated as unfit for human consumption on the 5th day of the storage, it was revealed that but the sensory scores of MSs treated with RAT1 and RAT2 were still acceptable for human consumption.

    Abstract Gün geçtikçe tüketicilerin bilinç düzeyindeki artış, sağlıklı atıştırmalık ve fonksiyonel gıda konseptine evrilmesi gerekliliğini beraberinde getirmiştir. Atıştırmalık grubunda konsantre bir ürün olan meyve barları; vitamin, mineral ve lifçe zengin kuru meyve ve sağlıklı yağ kaynağı olan kuruyemişleri ihtiva etmesi, lezzetli çeşitleri ve uzun raf ömrüne sahip oluşuyla; fonksiyonel nitelikler kazandırılabilirlik açısından diğer atıştırmalıklara kıyasla öne çıkmaktadır. Yapılan anket çalışmasında katılımcıların ,8’i günde bir defa atıştırmalık gıda tüketirken, ,1’i günde iki defa, %9,9’u günde üç defa ve %3,2’si ise günde dört defadan fazla atıştırmalık gıda tükettiğini ifade etmiştir. Ayrıca, katılımcıların atıştırmalık gıda olarak tükettiği ürünler sebze (4.86), yoğurt (4.85), meyve (4.80), Kuruyemiş (4.55) ve Çikolata (4.39) olduğu görülmektedir. Bu bağlamda makalede; snack bar işleme prosesi, snack bar üretiminde kalite parametreleri ve snack bar bileşenlerinin fonksiyonel özellikleri incelenmiş ve bireylerin atıştırmalık bar tüketim alışkanlıklarını incelemek amacıyla bu kapsamda örnekleme tekniği kullanılarak toplam 536 katılımcıya online anket uygulanmış olup çıkan sonuçlar SPPS 24 programında analiz edilmiş ve değerlendirilmiştir.

    Abstract Poly (3-hexylthiophene-2,5-diyl) nanowires (nw-P3HT) have been a great interest for organic electronics, including organic field-effect transistors, organic photodetectors, organic photovoltaics, etc due to easy formation in the solution process. Thus both explanations of charge transport dynamics and morphology are crucial for device performance. Here we demonstrated the optoelectronic properties of the P3HT nanowires where the polymer backbones were parallel to the nanowire axis. The nanowires tended to form a bundle due to van der Waals interactions. Nanowire bundles were separated by 1,8-diiodooctane (DIO) additive for photovoltaic fabrication.     Abstract Nisin doğal ve güvenilir bir gıda katkı maddesidir ve Lactococcus lactis’ ten üretilir. Peynirden balığa ve içeceklere kadar çeşitli gıdalarda katkı maddesi olarak kullanılabilir. Nisin özellikle gram pozitif bakteriler üzerine etkili iken gram negatif ve maya küfler üzerine bir etkisi yoktur. Nisin vücuda alındıktan sonra sindirim enzimleri tarafından inaktif hale getirilir bu nedenle hiçbir toksik etki yaratmaz. Ayrıca, FDA tarafından onaylanan tek bakteriosindir. Nisin sadece toplam bakteriler üzerinde etkin değil aynı zamanda laktik asit bakterileri, koliform ve patojenler üzerine de etkilidir. Nisin su ürünlerinde bulunabilecek L. monocytogenes gibi bazı patojenler üzerine inhibe edici özelliğe sahiptir. Ayrıca; nisin üzerine yapılan pek çok çalışmaya göre, nisin su ürünlerinin mikrobiyolojik güvenliğini sağlar ve raf ömrünü uzatır. Balığın kokusu üzerine olumsuz bir etkisi yoktur. Dahası, balığın doğal kokusunu muhafaza eder. Balıketi pH’sı ve rengi üzerine de olumsuz bir etkisi yoktur. Nisin TVBN, TMA değerleri ve psikrofilik ve mezofilik bakteri sayısının artışını depolama süresince kontrol etmektedir. Ayrıca, nisin vakum paketleme, ışınlama ve diğer katkı maddeleri ile beraber başarı ile kullanılmaktadır. Bu sayede nisin su ürünlerinin raf ömrünü artıran güvenli ve doğal bir katkı maddesi olarak kabul edilmektedir.

    Abstract The objective of this study was to determine sensorial, microbiological and physicochemical quality of whole cuttlefish (Sepia officinalis) during the stored without ice in refrigerator temperature. Sensory (quality index method [QIM]), physicochemical (pH, moisture, color measurement, trimethylamine nitrogen [TMA-N], total volatile bases nitrogen [TVB-N]) values and ammonia value [NH3] and microbiological analysis [total psychrotrophic bacteria and mesophilic aerobic bacteria] were determined during storage period. The results indicate that the shelf life of cuttlefish stored was found as 6 days at 2oC “acceptable quality”.Sensory and physicochemical quality loss and certain deterioration of cuttlefish was determined that unacceptable 9 days at 2oC.
